Simple Salad Dressing
This is an easy and tasty dressing in the French tradition. The combination of fennel and coriander seeds has been called "supernaturally good".
This recipe makes enough dressing for two small dinner salads or one large one.
Ingredients:
One quarter teaspoon whole coriander seed
One quarter teaspoon whole fennel seed
One teaspoon balsamic vinegar
Three teaspoons red wine vinegar
Four tablespoons extra virgin olive oil
Method:
Measure the fennel and coriander seeds out into a mortar and pound them with a pestle. The idea is not to reduce them to a powder but to crush the
coriander seeds and batter the fennel seeds which will release the aroma of the two spices. You will smell this happening as you proceed!
This is how the spices should look:
Transfer the spices into a small jar or similar container, add the vinegars and the oil and mix all. I like to let the dressing sit at room temperature for
an hour or so or overnight in the refrigerator before using it.
