Mango Chutney Sweet Potatoes
Ingredients for two:
Two cups (200g, 500 ml) sweet potatoes
One tablespoon (15 ml or 15g) butter
One quarter teaspoon (1.5 ml) curry powder
Two tablespoons (30 ml) chicken stock or water
One quarter cup (60 ml) mango chutney
To serve four double above amounts and
adjust microwave oven time as below.
Method:
Peel and cut the sweet potatoes into pieces of a suitable size. Mix all ingredients well in a small
baking dish. I use a two cup oven safe bowl. Microwave for six minutes. If cooking the larger
amount for four increase this microwave oven time to ten minutes. This time works for my 1500
watt microwave oven.
To adjust for your microwave oven you may need to increase this time.
If you are uncertain about this cook for the times given here and try a bite to see if they are about
half cooked. Add more microwaving time as seems right.
Stir to mix well again.
Bake at 350F (175C) for 30 minutes.
