This is my version of the Thanksgiving and Christmas favorite you probably know well. I have changed some things to improve
flavor and texture and to lower cost. Have you taken notice of the current price of "French Fried Onion Rings?"
Shocking! This recipe will provide four portions as a side dish.
Ingredients for four portions:
One tablespoon olive oil and more as needed
One large onion, sliced, which should amount to a bit more than 2 cups or 350g
A pinch of sugar

Two cups or about 300g green beans with this initial preparation
One cup or about 75g of diced mushrooms
One teaspoon of chopped fresh rosemary
Three quarters of a cup of undiluted canned cream of mushroom soup
These ingredients will fill a three cup (750 ml) rectangular glass baking dish
Method:
When the green beans have had their initial preparation and the caramelized onions are ready:
Add the mushrooms to the onions and brown them a bit.
Put the green beans in the baking dish, then the onions and mushrooms,
then the undiluted soup and finally the rosemary. Stir until mixed well. Microwave for six minutes.
During this six minutes preheat your oven to 350F (175C) although you may well have something else in the oven already.
Happily, holidays are like that. Bake uncovered for ten to fifteen minutes. The casserole is ready and
should look something like this.
