Fragrant Rice - an Indian recipe
Ingredients for two generous servings:
One cup (g) Basmati rice
One and one half cups (375ml) water
One quarter teaspoon (1.5ml) of salt
One teaspoon (5ml) butter or peanut oil
One half teaspoon (2.5ml) whole cumin seed
Ten green cardamom seed pods which have had an end trimmed
They should be trimmed so that water can reach the seeds but the seeds can't come out of the pods.
Method:
Put all the ingredients in a one and one half quart (1.5l) saucepan, adding the water last. Cover and bring to a boil.
Reduce heat to low and cook for ten minutes. Turn the heat off and let stand for ten more minutes. Pick the cardamom seed
pods out and discard them. Mix and fluff the rice distributing the cumin seeds.
